Brown, hot and plenty of it

Pot pie for supper.  It's made with broth from the carcass of a chicken I roasted the other night.  That roasted chicken turned out fabulously, I might add.  The meat for the pot pie is from roasted turkey leg saved from our T-giving dinner.  So, basically made with whatever veggies were on hand and left over meaty stuff.  Cheap, easy and filling.  I can't stress enough how many inexpensive meals can be had from a whole chicken.  Roasting a chicken is an incredibly easy supper... just add some potatoes and whatever other veg you might enjoy and you have a cheap, filling dinner for 3-5 people.

This was always my favorite way to use up any leftover roast. Now that my family is nearly vegetarian I rarely make them, but I need to remember that vegetables can make just as good a pot pie as meat can!

If I don't have any meat, we use veg broth. It tastes just as good.

Pot pies are one of my all-time favorite things to eat. I don't make them often but we had mushroom pot pies for Thanksgiving. I have a bag of mushrooms right now - I just might have to make some!
